The history of the House Zimmer

History

Issued from a line of winemaker descents from 1840, the family’s ZIMMER managed the trade house “Preiss-Zimmer”.

Since 1999, the house decided to return to a bottling at the domain of wines from its own vineyards (9 hectares around Riquewihr).

The works of reorganization and commercial launch make good progress.

Nowadays, Régine and her daughters, Laure and Carole, decide then to continue to produce wines of the domain in the respect for a quality work to insure the authentic expression of soils.

Reasoned vine growing

Cutting doubles in Guyot,
1 row on 2 is covered with grass,
Mechanical weeding,
Band trellis,
Production lower than the authorized ones,
Manual grape harvests with selection on the vinestock,
Pneumatic pressing for a slow and low pressure extraction, in whole clusters,
Natural and static must settling,
Alcoholic fermentation in oak barrels and maturing on fine lees,
Bottling at Domain,
9 hectares in 66 parcelles : 80% in AOC ; 20% in Grand Cru (Riesling and Gewurztraminer),
30 references of wines,
Yearly Production: about : 50 000 bottles.
